San Choy Bow Lettuce Wraps

Lettuce wraps with tofu and tamarind glaze

Ingredients (serves 2-4)

  • 1 Cos Lettuce
  • 10ml Sesame Oil
  • 15ml Vegetable Oil
  • 200g Tofu or 100g Tempeh
  • 3 Spring Onion Chopped
  • 2 Garlic Cloves Chopped
  • 1 Thumb Ginger Finely Diced

  • 2 Long Red Chillies Diced
  • 15g Black Sesame Seeds
  • 50g Peanuts
  • 50g Tamarind Paste
  • 50g Sugar
  • 100ml Water
  • 1/2 Cinnamon Stick
  • 1 Star Anise

Step 1

Firstly, bring the oven to 160°C. Then place the peanuts in the pre heated oven and cook until lovely and dark

Step 2

Chop the tofu and the tempeh into bite size cubes.

Step 3

In a fry pan on high heat put In the vegetable and sesame oil and bring close to a smoking point. Add the onions, and cook until translucent, add the garlic and ginger and cook for a further 30 seconds.

Step 4

Add the tofu and tempeh and fry until they have got some colour to them.

Step 5

Add the black sesame seeds and cook briefly pour into a bowl and set aside.

Step 6

For the sauce, fill a pan with the ingredients and bring to a boil, reduce the heat to a simmer and cook until the sauce is sticky but not too thick. You want it to be honey in consistency.

Step 7

Putting them all together, place the lettuce leaves on a plate, add the tofu.
