Cheesy Cabbage Pancakes

This is an any time dish. I love them for breakfast where as I know friends of mine who love them for lunch and another lot of friends love them for dinner. It’s the classic Scrubs thought or ‘Brinner’ where we can have breakfast for dinner.


  • ¼ green cabbage shaved
  • 20ml vegetable oil
  • Pinch of salt and pepper
  • 200gms All Purpose Flour
  • 200ml Milk
  • 200ml water
  • Salt and pepper to taste.
  • 150gm grated cheddar

Step 1

With a knife, cut the cabbage into quarters from the top through to the stem. With the knife or a mandolin shave the cabbage into strips (you can use as much or as little of the cabbage as you like. (This could also work with other hearty veg)

Put the oil in a pan and place the cabbage on top. Fry the cabbage for as long as you can. The wonderful dark bits that you will get are the best bits and so delicious. So the more the merrier.

While the cabbage is frying, mix the flour, milk, water, salt and pepper together. The consistency should be like thin paint. If not then add more milk.

Once the cabbage is fried and the batter made, combine them both evenly mixing them together.

How to cook cabbage

Place a pan on the heat and put on medium high. Add a little oil or butter to the pan to help cook. With a ladle, scoop a nice amount of the pancake mixture and put into the pan with the aim to get a nice sizzle. When you turn the cabbage pancake, top the cooked side with cheese. The residual heat will help melt the cheese.

Serve with fried onions on top and extra cheese.

    This was awesome. I made half with cabbage, and half with fried onion and chilli. I used soy milk and gluten free flour and everything still worked beautifully.
