Charred red cabbage in burnt butter soy



Element 1

  • 1 wedge of cabbage
  • 100gm butter
  • 50ml soy sauce

Element 2
Miso and roast peanut tarrator

  • 200gm roasted peanuts
  • 200ml grapeseed oil
  • 75ml peanut oil
  • 2tbls white miso
  • 1 tsp sea salt
  • 15 cubes of ice
  • 50ml ice water
  • juice of 1 lemon.


Element 3
Burst red currents

  • 50gm red currents,
  • 5ml sesame oil

Element 1
Charred red cabbage in burnt butter soy

1. Steam the cabbage for 15min or until tender.

2. Burn the butter quite dark. Pour in the soy and stir to stop the cooking process

3. Take out of the steamer and paint on the first layer of butter soy

4. Lay the painted side down and cook for 30 seconds. Paint the side facing up and then turn to face the coals. Do this 3 times or until its dark and charred

5. Set aside


Element 2
Peanut sauce

1. Place the peanuts in a vita-mix with 5 ice cubes, lemon juice and water. Blend slowly to start then build to ¾ speed.

2. Slowly pour in the oil and with every 50ml of oil, add a cube of ice and a little cold water.

3. Once all oil is in add the miso and blend on high.

Element 3
Blistered red currents

1. Put the red currents in a fine strainer and toss in the oil.

2. Place the strainer on the coal and toss once to blister.


To serve, place the cabbage on the plate, the sauce on the side and finish with a garnish of the red currents and flower petals.
